I don’t know how your weather is, but warm autumn days have arrived. Of course, not all the trees have yellowed leaves, but the maple leaves are already yellow and red. Every day my children and I collect maple leaves. My daughter will need them for school work, we have already been warned that the leaves should be collected and dried. And another friend suggested to me that it is better to dry the leaves this way: the leaves need to be ironed first through a newspaper with a hot iron (that is, dried), and then into a book, so the leaves in the books do not get smeared, and the leaves remain red, green and yellow, not brown. We came back from a walk with the children today, ate and drank some hot tea, but there was nothing for tea. Well, without thinking twice, I prepared cookies.   • 100 grams soft butter

  • 2 eggs

Next, I take a bowl in which I will knead the dough and add 100 grams of sugar and lemon zest. Sugar needs to be ground with zest so that it becomes moist and fragrant. I rub it with my hands. Next, I add softened butter and mix with a spoon.



Now you need to extinguish the soda with vinegar. I take 1 teaspoon of soda and pour it into a tablespoon, it will be more convenient to extinguish it and pour a little vinegar (9%) onto the soda, the soda should “fizz” and add it to the dough. I mix everything.


Now you need to add flour. The flour must be sifted first. I don’t add all the flour at once, but I added a little bit and stirred, a little more, and so on until the flour runs out. It took me 2.5 cups of flour.


I knead the dough, but the dough should be soft. Next, we need to wrap the dough in cling film and put it in the refrigerator for 30 minutes. While the dough was in the refrigerator, I played a little with the children, drew and even managed to read a book.


After 30 minutes, I take the dough out of the refrigerator. I also sprinkled powdered sugar into the bowl. Now I pinch off pieces of the dough and roll them into balls the size of walnut. The children were right there and began to help me, but I still changed it later so that the balls were even. I love when everything is neat.



Next, I take a baking sheet and line it with parchment paper. On a baking sheet I place cookies that I have previously rolled in powdered sugar. I got 25 pieces and put the rest of the dough in the refrigerator again. I “stuck” 23 balls on the second baking sheet.


I first turned on the oven, it should be preheated to 180 degrees. Place our delicious cookies in the oven for 15 minutes. But just don't overdry it. For example, I took out 1 cookie after 15 minutes and broke it, the cookies were ready. But, you rely on your oven.
