Ingredients:

  3. 1 small zucchini (its weight should correspond to 1/3 of the weight of meat);

  5. 2-3 tablespoons semolina;
  6. 1-2 pinches of dried dill;
  7. A little salt and pepper.

Cooking

Separate the fillet from the chicken breast, if you have skin, remove it, it is not used in mincemeat. With the bulbs remove the husk, cut into medium slices. Wash the fillets, dry them, cut into arbitrary pieces. Meat with onions scroll through the meat grinder.

Squash the squash, cut off all unnecessary, remove the skin, cut it in half, take out a softer and juicy core with seeds. The remaining flesh cut into pieces, skipped through a meat grinder.

Pour egg into minced meat, add pepper, salt, dried with greens, mix everything thoroughly by hand. At the end of cooking add semolina. Every year we collect a large harvest of zucchini, and in the fall we are at a loss for what to cook. Today I want to offer wonderful pancakes made from zucchini and chicken breast. How to make zucchini and chicken pancakes

For this dish we need a small zucchini. I had it weighing 900 grams, but after the skin was peeled off and the seeds were removed, its total weight was 600 grams. Variety of zucchini does not matter, for the beauty I took a copy of a bright yellow color.

Three vegetables on a regular coarse grater. Spread the mass lightly sprinkle with salt, stir and remove in the direction of the minutes for 30. It is necessary that the zucchini let the juice.

In the meantime, cut the chicken breast into cubes, approximately 0.5 cm. You can, of course, chop it with a meat grinder or combine, but manually chopped breast in pancakes will be juicier.

Tip:  If your breast was just chilled, then, to make the meat cut better, it can be slightly frozen. If, on the contrary, the chicken was frozen, then it is better to cut the not completely thawed piece.


After half an hour has passed, the crushed zucchini must be thoroughly pressed. I managed to squeeze out not a lot of juice from a vegetable.


After pressing, the squash mass decreased by a quarter.


Cooking dough for fritters. To the squash we add chicken breast, 2 eggs, passed through a press, 2 cloves of garlic, 3 tablespoons of sour cream, 70 grams of flour and 1 teaspoon of salt.


All mix until smooth consistency.


Now, it remains to bake fritters. In a frying pan with heated vegetable oil lay out squash-chicken mass. Spoon or spatula to form a flat cake and close the pan with a lid. Fry for 1 minute on high heat so that the meat does not start giving juice. Then, reduce the fire to medium and fry until golden brown.


Turn the squash fritters and bring them to readiness, also, under the lid.


Serve hot zucchini pancakes with chicken, adding sour cream to the plate.
